Ginger has been a part of the culinary arts from time immemorial and is mentioned in the sources from ancient Egypt. Marco Polo mentions encountering it during his travels along the Silk Route in China in the 13th century. From there, it seems that love of the sweet and spicy flavor of ginger has in one way or other traveled the world's kitchens.

With a long tradition of herbal lore and appreciation of the medicinal properties of a wide range of herbs, roots and other fruits and vegetables, Chinese cuisine naturally holds an important place for ginger.
