From April 6 -11, 2015, join us at Voilà! for a week of sun-blessed Spanish cuisine inspired by traditional recipes passed down from generation to generation by grandmothers.

Special guest chef, Victor Burgos from Honk Kong’s two Michelin star restaurant, The Principal, will take the helm in Voilà’s kitchen where he will recreate authentic Spanish dishes learnt from his grandmother.

In addition to the array of international favourites at the fabulous Voilà! buffet, Chef Victor will offer daily changing highlights from his Spanish repertoire such as Castillian garlic soup topped with Serrano ham,

lubina al horno, roasted sea bass with asparagus and cherry tomatoes, and classic patatas bravas, Spanish-style spicy potatoes. Lovers of seafood can enjoy salpicon de marisco seafood salad, and seafood paella.

There will also be pisto manchego, sauteed mixed vegetables, andescalivada, a delicious dish of red capsicums, onions and aubergine with anchovies. Evening diners at Spanish Food Week will also enjoy

a complimentary glass of sangria and benefit from special offers on Spanish wines.

The feast at Voilà! will end with a selection of imported Spanish cheeses from the cheese room, and divine desserts including churros with chocolate.

Chef Victor Burgos Profile

Born in Valladolid near Madrid, Chef Victor Burgos has been passionate about Spanish cuisine since he was a young boy. Inspired by his mother’s home cooking,

he enrolled in a culinary school at the age of 16.

After graduating, he went on to work in many restaurants in Spain, including the Michelin starred El Chaflan, and in prestigious hotels such as Gran Hotel Bahia del Duque in Tenerife,

and the renowned, The Berkeley in Knightsbridge, London.

He first came to Thailand as chef at the Grand Millennium’s popular Spanish restaurant, Tapas y Vino. A master of authentic Spanish cuisine, he has been guest chef at top hotels,

catering events, and on national television.

Currently, Chef Victor is chef at the 2 Michelin star restaurant, The Principal, in Hong Kong.
