Anantara and AVANI Hotels Raises a Glass with a Classic Billecart-Salmon Champagne Weekend Across Thailand

Anantara and its sister brand AVANI Hotels and Resorts proudly announce a weekend of bubbles and good food with Billecart-Salmon, renowned Champagne producers. From Chiang Mai to Bangkok to Phuket, Anantara's expert chefs have crafted lavish dinner menus to compliment the various Billecart-Salmon vintages and non-vintages. This is a unique opportunity for wine lovers in each city to sample and appreciate Billecart-Salmon champagnes along with some of the finest cuisine from celebrated Anantara and Avani properties.

Seven Generations of Billecart-Salmon Champagne

Founded in 1818, Billecart-Salmon in Mareuil-sur-Ay is the oldest continuously family-owned house operating in Champagne. Now under the management of the family's seventh generation, brothers François and Antoine Roland-Billecart, Billecart-Salmon thrives on the philosophy that elegantly delicate Champagnes emerge from early harvest yields.

Through their own 30 hectares of vineyards and their close relationships with growers across the region, the Billecarts develop this delicacy through the four press houses on the property, thereby maintaining minimal handling and movement of the grapes, and by scrupulously overseeing the vinifying and blending.

This careful attention to detail, perfected over more than two centuries, creates, according to renowned wine expert, Stephen Brook, MW, "some of Champagne's most delectable wines".

An Exceptional Champagne for Elegant Meals

Billecart-Salmon will travel from Chiang Mai to Bangkok then to Phuket from 29 September to 1 October, sharing their wines at a spectacular pairing dinner at an Anantara or Avani property at each city. Each dish will be paired with one of these exquisite Champagnes:

Starting in Chiang Mai on Friday, 29 September 2017, diners can sample Billecart-Salmon champagnes at Anantara Chiang Mai Resorts. Executive Chef Patricio Basombrio Cadano from Peru is Chiang Mai's first and only Latin American chef created a special pairing menu featuring Seaweed Tempura, Scallop Sashimi, Keta Salmon, Foie Gras, Snow Fish, Wagyu Short rib, and Sweet Yuzu Tea- Sweet Potato & Miso Sticks.

The next stop is Bangkok on Saturday, 30 September 2017, at the AVANI Hotel Riverside Bangkok. Chef Andrew Cole of Attitude Rooftop Bar & Restaurant creates a literal movable feast starting with canapes at the Champagne Bar before moving to a Raw Bar of fresh oysters, salmon, and beef tartare. The Live Chefs Table features whole charcoal roasted Norwegian trout and prime rib beef served whole. A sweet, happy ending come in an array of desserts, cakes, sweets, and fruits.

On Sunday, 31 September 2017, the tour ends in Phuket at the Anantara Layan Resort & Spa Phuket. Executive Chef Silvano Amolini presents Canapes of freshly shucked oysters, cheese, robata, and burrata, followed by Hokkaido scallops. Second course features Crispy poached egg, cauliflower mousseline, marinated fresh salmon with lemon and keta caviar, then Pan-roasted lamb loin with porcini mushrooms. Finish a perfect meal with White chocolate mousse with fresh berries, mango compote and banana ice cream.
