Setsubun Delights at Yamazato

Tuesday 09 January 2018 09:35
Looking forward to Setsubun and the transition from winter to spring, the chefs at Yamazato are cooking up treats with Setsubun Gozen lunch and Kaiseki dinner offerings. The first Gozen platter opens with a starter of Asari clam, shrimp, leek and wakame with miso dressing, the second offers beautifully grilled sea bass with fig miso and Japanese green pepper. Both platters feature highlight Ehomaki roll and pickled sliced turnip served with miso soup.

The Setsubun Kaiseki dinner comprises an appetizer of monkfish liver, oyster, and shrimp with wasabi egg yolk sauce; a soup of soft cod roe dumplings with mushrooms and a hint of yuzu; sashimi of tuna, yellowtail, sea snail and salmon; perfectly grilled Spanish mackerel and beef with canola butter sauce; a simmered sensation in wooden-cup shaped radish, abalone, soy beans, Otafuku wheat gluten, and plum-blossom shaped carrot. The feast continues with tempura of shrimp, snow crab, pond smelt fish, shiitake mushroom and Japanese green pepper; and a rice and noodle dish of hot vermicelli with Asari clam, honewort, shimeji mushroom and a hint of yuzu. Delicious Ehomaki roll and a dessert of soy milk mousse with sake lees and sweet red beans conclude a seasonal feast.
