Here's a treat in store for Hokkaido food fans: Kisso Japanese Restaurant has great pleasure in presenting two exceptional chefs visiting from Hokkaido, Kazuro Takanashi and Nakai Daisuke, to showcase their beautifully balanced a la carte menu, kaiseki dinner menu, and bento lunch box, from Friday 23 March to Sunday 1 April.

Borrowed from the Sheraton Hokkaido Kiroro Resort and The Kiroro, a Tribute Portfolio Hotel, Hokkaido, Chef Kazuro returns after a stimulating spell at Kisso in November 2017, while Chef Nakai makes his Bangkok debut.

With 35 years of experience, Chef Kazuro is a recognised "Shokunin" – a master of the exquisite edomae sushi cuisine which takes freshness to the next level. Among his specialties is marinating sea bream, flatfish or gizzard shad in salt and flavoring with fresh citrus or vinegar. Another is simmering conger eel in sweetened soy sauce. His Saiku-Sushi, vinegared rice rolled in dried seaweed, cut into intriguing patterns, are something those who experienced them last year will especially wish to revisit.

Chef Nakai San has been perfecting the art of Japanese cuisine for 22 years. Born and raised in Hokkaido there is little he doesn't know about its famous ingredients. His particular forte is traditional Japanese charcoal grilling using different kinds of woods to enhance flavors and aromas. Having worked the length and breadth of Nippon, he is a master of mixing different dishes from its various regions. Also expert at Japanese desserts, his sweet red beans are a dream.

Working with Hokkaido's finest fish and shellfish, as well as meats, fruits, and vegetables, flown fresh from their homes, the award-winning visiting Japanese chefs create their signature dishes to satisfy the local hunger for authentic Hokkaido dining experiences.

The fact that Hokkaido is renown as the place from which the best seafood in Japan comes will be especially well-reflected in their menu choices.
