This luxurious feast starts with a David Herve French oysters, prepared with passion fruit and sancho pepper vinaigrette, cured Ora King salmon, cucumber flower and lime – a fresh and balanced dish that sets the stage for the delights to come. This is followed by delicate foie gras royal, served with Earl Grey-smoked venison, parmesan chips, frisee salad and a port reduction.
Couples can then enjoy homemade lobster tortellini with a seared scallop, bacon and butter & thyme sauce, a sublime pasta dish that sings with the flavors of the sea. A palate-cleansing mango sorbet served with shiso leaves and crystal salt then prepares guests for a choice of mouth-watering main courses.
Couples can select flame-seared Iberico pluma, served with pan-fried chestnut mushrooms, Kipfler potatoes and a roasted capsicum cream & herb sauce, or seared yellowtail fish with crushed sweet potatoes, served with fava beans, vanilla oil and green asparagus salad.
The memorable night concludes with a deluxe Chocolate Ball, our chef's special dessert that sounds simple but contains many hidden depths.
