Seasonal Setsubun Favourites Herald Spring at Yamazato

Wednesday 20 January 2021 08:30
The culinary team at our MICHELIN Plate signature Japanese restaurant Yamazato once again marks the advent of spring by serving up seasonal delights in delicious Setsubun Gozen lunch platters and an 8-course Setsubun Kaiseki dinner from 1 - 28 February 2021.

Setsubun means the day before the beginning of spring. Setsubun in 2021 is one day earlier than usual, so on 2 February 2021 as per the old lunar calendar of Japan, Japanese will celebrate "Setsubun". Traditionally, on this day the Japanese eat a thick and uncut sushi roll or "Ehomaki" while facing in an auspicious direction to bring them luck. "Eho" refers to the direction for good luck and this year's Eho is south-south east.

Highlights of first Gozen lunch platter include a starter of Asari clam, shrimp, leek and wakame with miso dressing, while the second platter features a special rice dish of seasonal Ehomaki roll, thick and uncut sushi roll, garnished with pickled sliced turnip and plum paste.

The 8-course Setsubun Kaiseki dinner comprises spring specialties that include an appetizer of monkfish liver, shrimp, broad beans, maitake mushroom and vinegared miso with mustard; a soup of soft cod roe dumpling with mushrooms and a hint of yuzu; sashimi of tuna, yellowtail, torched sea snails and sweet shrimp; perfectly grilled sablefish and beef with a seaweed white sauce; a tempura course of snow crab, pond smelt fish, shiitake mushroom, asparagus and sweet potato; and a wonderful dish of hot vermicelli noodles with asari clam, honewort, shimeji mushroom and a hint of yuzu accompanied by Ehomaki roll. A delightful dessert of matcha warabi mochi with black sugar syrup and assorted fruit ends the springtime feast.
