Thirty years ago, Johannes Zillinger's father turned a centuries-old winery to organic viticulture. Johannes then went a step further and embraced biodynamic winemaking techniques, avoiding added chemicals such as yeast and sulphites typically used in modern estates. The resulting wines rely fully on the grapes grown in the most natural way possible, capturing the true aromas and notes of the vineyard.
CHAR's Chef Nikolas Ramirez is known for his focus on a few key ingredients from the freshest, most sustainable sources as possible in each dish, creating a delightful play of flavours from the individual and combined elements. Both Chef Nik and Johannes Zillinger choose the best components and use classical techniques in a modern setting to showcase fundamental flavours – so this dinner is an exclusive opportunity to feast on such complementary pairings.
Guests will be treated to a unique evening dining at CHAR Rooftop Bar. Chef Nik will oversee three food stations serving his culinary creations while Johannes Zillinger will be available to meet and discuss his wines.
