Chef Toni origins from the South of Spain grew up in a small town near Barcelona. He discovered the joys of cooking through Catalan and Andalusian cuisine, and it was this passion that steered him towards an embarking on a culinary arts degree at 18.
The inspired menu includes highlights such as mixed Salad served with duck ham, pickle radish and anise vinaigrette, roasted eggplant served with smoke dry fish, garlic baby spinach leaf and sambal oil, sea bass served with lemongrass bouillabaisse and laksa caviar and roasted pumpkin ice cream served with tropical fruit Macedonia and homemade goat milk yoghurt.
