Chocolate & Gagliardo Wine Dinner - A Gastronome’s Paradise Experience

The Sheraton Grande Sukhumvit, a Luxury Collection hotel will host an extraordinary gourmet wine dinner at the award-winning restaurant, Rossini’s on November 27th.

Rossini’s outstanding Sicilian chef, Gaetano Palumbo will entice diners with memorable dishes using high quality chocolate. His divine menu has been specially created to bring out the best in this alluring ingredient and will be paired with an impressive range of Gagliardo wines from Italy.

The Gianni Gagliardo family wine estate in Piedmont, Italy was originally started by Paola Colla, a fourth-generation winegrower. In the 1950s Paolo moved his operation to La Morra in the historical heart of the Barolo zone. Paolo's son-in-law, Gianni Gagliardo, joined the modest family business in 1974, and by 1986 had become the sole proprietor. Old casks were replaced with new small French barrels.

Gagliardo is a family affair; Gianni's two eldest sons are involved in the everyday operations. Stefano assists Gianni with winemaking and brother Alberto manages the family's 30 hectares of vineyards. The company's reputation is based on these outstanding expressions, but it also makes an excellent range of classic Piedmont wines that are among the best in the region.

At Rossini’s the evening of unforgettable cuisine and refinement begins with Chef Gaetano’s savoury bites and stuzzichini complimented by Prosecco duca del poggio.

The inspired six-course meal gets underway with tonno marinato al cacao purea di melenzane allo zenzero, marinated tuna in cocoa butter with eggplant and ginger puree. This intriguing dish will be paired with Favorita Fallegro 2008. A lively white wine with delicate floral aromas and notes of apple, pear and lemon, Fallegro is made from Favorita, an unusual grape that was once popular in the Langhe. The second dish, noci di capesante caramellate con pepperoni e riduzione di balsamico al cacao, caramelized scallops with roasted red capsicum, balsamic and a chocolate reduction is served with Dolcetto d’Alba DOC 2008. Produced with grapes harvested mainly from the Monforte commune in Alba, this youthful wine, displays floral earthy tones and nuances of white pepper and spice.

Other highlights of this exceptional dining experience include filletto di capriolo con mostardo di cachi e salsa al cioccolato, roasted venison fillet with persimmon mustard and chocolate sauce paired with Batie Nebbiolo Delle Langhe DOC 2006, a highly praised wine with intense berryfruit aromas and flavours enhanced by a velvety feel. The brasato di cinghiale con vino rosso e prunge al profumo di cioccolato, braised wild boar with black prune and a scent of chocolate will be served with Barolo Serre DOCG 2004, a distinctive wine matured for a total of twelve months in French oak and a further six months in bottle before release. With a bouquet of plum, spice and unobtrusive oak, this exquisite wine is full bodied and complex; the concentrated fruit is enhanced by supple tannins.
