Born in the northern city of Turin in Italy’s Piedmont region, Chef Federico pursued his love of food by studying at the hotelier school, Formont di Venaria Reale. Following his graduation he began an apprenticeship and a culinary career at Grand Hotel Iles Borromees, a majestic and historic hotel on the shores of Lake Maggiore in Stresa. Renowned for its fine Italian cuisine it was here at the hotel’s Bonromeo restaurant that Chef Federico learned the secrets of classic regional dishes.
Chef Federico went on to make his mark at Ristorante del Cambio, a revered restaurant in the heart of Turin. During his time here, Cond? Nast Traveller Magazine praised it as the best restaurant in Italy.
Having perfected the art of northern Italian cuisine, Chef Federico decided to expand his knowledge of his native food and moved to southern Italy to learn the secrets of sun-drenched Mediterranean flavours. Here he chose as his mentor the talented Chef Gennaro Esposito of Torre del Saracino near Naples, an exceptional restaurant with 2 Michelin stars and 3 forks from L’espesso guide.
Following his return to Turin, Chef Federico worked as number two alongside Chef Pirluigi Consonni at the outstanding restaurant, Vintage 1997. Shortly after Chef Federico joined the team the restaurant was awarded its first Michelin star.
More recently the passionate young Italian chef has collaborated with Chef Marcello Trentini of Mago Rabin restaurant, and highly respected and innovative Chef, Alfredo Russo at Dolce Stil Novo.
With such an exceptional culinary pedigree, Chef Federico is the perfect choice to take the helm at Rossini’s. He is looking forward to serving discerning diners the exquisite and varied cuisine of Italy infused with his own inimitable style and creativity.
