Chef Federico Allegri is a rare and inspired talent originally from Turin in Piedmont, a region of Italy renowned for its rich culinary heritage and home to the inspirational Slow Food movement. Chef Federico has an outstanding culinary pedigree and has worked alongside the most respected chefs in Italy. He is also the former prot?g? of Michelin-starred Chef Alfredo Russo from the revered Dolce Stil Novo restaurant in Turin.

Building on Rossini’s reputation for excellence, Chef Federico has introduced new and enticing appetizers to the menu including bagna cauda, a warm and aromatic dip from the Piedmont region made using anchovies and garlic and served with a selection of fresh vegetables, and grilled half lobster with Mesclun salad and beetroots. Other delightful appetizers include grilled scallop with green apple and zucchini and seared duck liver with cranberry jam.

Diners can also enjoy the autumnal flavours of wild mushroom soup served with veal sweetbread, a delicate seafood soup served with garlic bread, and a hearty creamed fava bean soup served with fresh burrata cheese and olives.

Highly recommended is tonno vitellato, the chef’s interpretation of the renowned veal and tuna dish, vitello tonnato. Chef Federico’s inspired menu also features an exquisite homemade pappardelle dressed with a rich and satisfying liver ragout, suckling pig belly with fennel seeds and pumpkin pur?e, and grilled Wagyu rib eye with rosemary sauce. Lovers of seafood and fish will enjoy crispy octopus with corn and capers "Dolce Stil Novo", and grilled salmon, 'fregula sarda' with porcini mushroom and marjoram.

The new menu offers an irresistible selection of Chef Federico’s desserts including Moscato sabayon with amaretto ice cream, liquorice parfait with pepper marinated pears, and milk terrine with strawberry tartar. There’s also a choice of grappa and fine Italian coffee with biscotti to complete an unforgettable meal.
