A gifted chef, Stefano Merlo is a native of the historic city of Padua in northern Italy. His passion and outstanding culinary pedigree has enabled him to work with many highly respected chefs in prestigious restaurants around the world.
While creating his enticing new menu, Chef Stefano collaborated at Rossini’s with Chef Alfredo Russo, the distinguished Michelin star chef from “Il Dolce Stil Novo” restaurant in Turin. Drawing inspiration from his extraordinary talent and innovative style, the result is an exceptional menu of distinctly modern Italian dishes.
Diners can enjoy a choice of enticing antipasti and salads including smoked cod fish with fennel salad and juniper berries, and Alfredo Russo’s veal tongue in green sauce. Other tempting appetisers include seared foie gras with raspberry sauce, and a selection of Italian charcuterie created by Chef Stefano.
From the primi piatti menu highlights include tortelli with Parmesan sauce, ham and peas, and delicious homemade “pansotti” filled with roasted veal, porcini and a truffle sauce. The soup and risotto selection features risotto with mint and langoustine, and a velvety pumpkin soup with Parmesan clouds, amaretti biscuit and parsley.
Highly recommended main dishes are the succulent venison tenderloin with apple and ginger, and grilled Wagyu beef rib-eye with rosemary sauce. Other options on this beautifully balanced menu include snow fish with a black ink spicy broth and celery root, and sea bream in a crust of olives and mashed potato.The menu also offers a choice of sweet treats such as Alfredo Russo’s mint panna cotta, the intriguing citrus and fennel broth with grapefruit sherbet, and the divine hazelnut souffl? with gianduja sauce and chocolate sherbet. A choice of fine Italian cheeses is also available to end an unforgettable meal of refined Italian cuisine.
