Kombucha is a fermented tea-based drink rich in beneficial probiotics and vitamins; it is naturally lightly fizzy and can be brewed with different spices and herbs to impart refreshing flavours that give an energizing lift on a hot spring day. The key to crafting magnificent home-brewed 'Elements Kombucha' is in selecting the finest ingredients, which must be organic, sustainable and seasonal based.

Parallel with Elements, inspired by Ciel Bleu's culinary principle and philosophy of creating refined French cuisine laced with Japanese infuses, the artisanal ingredients used in 'Elements Kombucha' are carefully picked by the Kombucha Maker and oversees by Chef Gerard, and prepared in flavour combinations that not only showcase spring but also complement with its seasonal menu perfectly.

The 'Elements Kombucha' for the Spring Guestronomic Dining Journey highlights includes 'Suika Mojito,' an organic loose-leaf green tea fermented with raw wild honey, watermelon, passion fruit, and mint for a beautifully refreshing flavour which paired seamlessly with the delightful 'Aged Sashimi Duo' and 'Smoked Eel' dishes. The fabulously refreshing 'Melon Genmaicha,' which has genmaicha as a tea base fermented by raw wild honey and Japanese melon to pair perfectly with 'Hokkaido Hotate Tartare' and 'North Sea Langoustine' seafood dishes; and the flavourful 'Fully Bloomed,' an aromatic blend of organic loose-leaf green tea fermented with raw wild honey, pineapple, lemon, and zesty white turmeric, which is the quintessence of spring sophistication matched with a dish of 'White Asparagus.'
