The Gill, Regent Phuket Cape Panwa held the dinner of The Chaîne des Rôtisseurs Bailliage Phuket. This La Chaine dinner was a return after a year, to present the delights conjured up by Chef Justin of food rarely served on Phuket- game, with wines ably selected by the Regent’s General Manager, who are also Charge de Mission, Brice Borin.

Executive Chef Justin with great support from General Manager, Mr. Borin, created one of those very rare dinners here in Phuket- food like this maybe common in Europe. Guests are amazed with Chef Justin’s creation including the various starters including Wild Boar or the wine, which included a 2007 Grand Cru Burgundy. Most attending, feel the food was exceptional. Wild rabbit, Smoked trout, Wood pigeon, Free range Cervena- a true gourmet’s delight.

One of the interesting aspects of the dinner is the total effect of everything on the plate with the wine. The wine in the rabbit Rillettes changed when has it with the apple or the rabbit and the best effect is achieved by eating the apple on the same fork as the rabbit. The same occurred with the Cervena course and whether taste it with the beetroot Jam or the chocolate hot ice-cream- the best taste is achieved by eating small amounts of everything simultaneously.
