A relaxed, welcoming venue nestled within the hotel's iconic koi fish courtyard, on 24 November Spice Market will be serving Chef Christian's seven-course Thanksgiving dinner giving guests who were not able to secure a table at Madison steakhouse an opportunity to celebrate with flawlessly executed seasonal staples
Featuring a bounty of Thanksgiving dishes, the menu opens with fleshy and crisp Geay Oysters "Au Naturel" followed by a traditional Cherry-Duck Country Pate and soul-warming Chicken Consomme with Winter Black Truffle and Poached Foie Gras. The first main course Flavoured Seafood Vol Au Vent is a flaky sensation, while the closing act of Smoked and Apple-Glazed Turkey Breast is the Thanksgiving piece de resistance. For dessert, the perfectly Sticky Toffee Pudding is followed by bite-sized Pumpkin and Pecan Pies and melt-in-your-mouth Sweet Potato Caramel Pralines.
Madison's new Chef de Cuisine Christian Caluwaert has worked in some of the finest kitchens of Brussels, Paris and St. Tropez learning the ropes from the industry's heavyweights, including his mentor Michelin-starred Chef Vincent Maillard and Chef Frederic Vardon in whose celebrated restaurant Le 39V in the heart of Paris's Golden Triangle Christian worked as Chef de Cuisine.
