Chef Tan, who has more than 20 years of culinary expertise in Southeast Asia, is renowned for his visually stunning techniques and devotion to traditional Cantonese roots. During his professional culinary journey, he established himself in Jakarta as the Executive Chinese Chef at one of the city's most well-known restaurants, where he worked with a consulting chef with two Michelin stars. At Shang Palace, Chef Tan puts his efforts on design and innovation to create the new menu with the support of his culinary team.
