The Sensory Pathways Chef's Table is a novel tasting experience infused with the beauty of art. Created by Chef Paweenuch "Kaew" Yodpreechawijit, five courses of traditional Thai flavors are elevated with contemporary cooking techniques, and presented as edible works of art that pique all five senses.

Chef Kaew is a graduate of Le Cordon Bleu and is one of Thailand's most famous female chefs. After winning season one of MasterChef Thailand, due to popular acclaim, she also appeared as a guest in subsequent seasons and is a familiar face at food festivals and exclusive chef dinners.

For the completely original menu she has created for Hyatt Regency Koh Samui's Sensory Pathways Chef's Table, she draws inspiration from the setting, a dramatic beachfront with ocean views framed by iconic architecture, the riches of Thai waters, with crabs and tiger prawns from the Gulf of Thailand and oysters from Surat Thani, and the artworks as curated by 333Gallery.

Highlight dishes include the Thai Coconut Milk Galangal Soup, with edible perfume spray for a unique fragrance and creaminess. Her massaman wagyu curry is a modern deconstruction of an age-old dish, with each element presented separately, the diner is invited to help grind the curry paste while inhaling the aromas of each spice. Chef Kaew's dessert, meanwhile, inspired by the resort's Yangna trees, with mangosteen and white chocolate mousse on a bed of crumble with dark chocolate fronds sprouting out the top.

333Gallery is a leader in Southeast Asian contemporary art. It presents promising young artists on an international stage. On display throughout the resort, with guests invited to take a stroll, explore, and admire before sitting down to dinner, are the works of eight carefully selected artists: Ravit Teutvongse, Kaewtrakarn Junlabon, Wishulada Panthanuvong, Akras Pornkajornkijkul, Wuthigrai Siriphon, Rungruang Sittirerk, Takorn Tavornchotivong, and Maneerat Thamnarak.

Actor-turned-artist Ravit's work in particular inspires the tasting journey, with his bold acrylic paintings reproduced as edible art and presented as part of the first course. What drives his work is a decades-long search for the ultimate expression of beauty, with each piece a reflection of the artist's soul at the moment it was created.

Hyatt Regency Koh Samui is the ideal location for those in search of experiential gastronomy, located in Chaweng, the heart of the island's culinary experience. The Sensory Pathways Chef's Table will be hosted every Thursday through Sunday beginning at 7:00 PM at the resort's Yangna Cuisine; an artist's muse in itself, with Yangna trees informing the space.
