You will need:
2 cups Almond Breeze Unsweetened / 2 tbsp Olive oil / 2 Onions (finely chopped) / 2 Celery stalks or 1 small bunch of Chinese celery (finely chopped) / 3 cups of Champignon/Button mushrooms (sliced) / 1 tsp Truffle oil / Pinch of Salt & pepper / Parsley to garnish
To make: Heat the olive oil and add the onion, celery and mushrooms, stirring over a medium heat until softened and browned for 2-3 minutes. Turn down the heat to low and pour in the Almond Breeze, (leaving a small amount to add at the end), and season with salt and pepper. Keep stirring and warm through, without boiling, for a few minutes. Transfer the mixture to a blender or use a hand blender. Add the truffle oil and puree on high speed until smooth and thick. Serve piping hot in warm bowls and garnish with parsley. Eat by itself, sprinkle with croutons or serve with crusty bread. Add a swirl of Almond Breeze if desired.
